Decomposed red and yellow granite soils with a generous amount of clay buffer the vines and advance balance throughout the vineyard where naturally low yields enhance fruit concentration.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWinemaking:\u003c\/strong\u003e\u003cbr\u003eThe selected grapes are hand harvested at optimal ripeness and only the finest bunches reach the cellar to be crushed during the cool morning hours. Whole bunch pressing ensures soft extraction of the juice which is then settled before being racked to first and second fill 300l French Oak barrels for ferment.
